Miso Ramen

The most consumed noodles dish in Japan



Ingredients for 2 bowls

  • 200g wheat noodles
  • 200g pork (pork belly, loin or filet mignon)
  • 100g ground pork
  • 2 tbsp vegetable oil
  • 15g ginger
  • 3 garlic cloves
  • 1 onion
  • 1 tbsp sesame seeds
  • 1 tsp chili puree
  • 2 tbsp Miso paste
  • Ground pepper
  • 2 tbsp soy sauce
  • 1 tbsp cooking sake
  • 1 tbsp sugar
  • 1 egg
  • 100g bean sprouts
  • 2 seaweed sheets (for sushi rolls)
  • A small piece of leek
  • 3 spring onion
  • Japanese chili powder shichimi togarashi (optional)

Broth

  • 500g pork bones
  • 20g seaweed (kelp)
  • 15g ginger
  • 4 cloves of garlic
  • ½ leek
  • 1 onion
  • 1 tsp salt
  • 2L water
