Thai Rice Noodle Clear Pork Soup

Made with a three-hour broth



Ingredients for 4 people

  • 500g thin rice noodles (1mm)
  • 200g pork loin
  • 2 pork belly slices
  • 200g fish balls
  • 40g garlic cloves
  • 1 tbsp vegetable oil
  • 2 × ¼ tsp salt
  • Ground pepper
  • 150g bean sprouts
  • 2 green onion
  • 10g cilantro
  • A few pinches of Tianjin preserved cabbage (optional)

Broth

  • 1kg pork bones
  • 3L water
  • 1 tbsp + 1 tsp salt
  • 2 tbsp fish sauce
  • 7g coriander seeds
  • 7g peppercorns
  • 1 onion
  • 1 head of garlic
  • 2 heads of pickled garlic
  • 5cl pickled garlic juice
  • 80g black or white radish
  • 15g rock or white sugar
