Mauritian Fried Noodles: Mine Frit

The garlic chives and the garlic dipping sauce enhance this Chinese recipe



Ingredients for 4 people

  • 500g egg noodles
  • 8 shrimps
  • 5 garlic cloves
  • 2 carrots
  • 150g green cabbage
  • 150g bok choy or choy sum
  • 1 onion
  • 80g garlic chives
  • 3 eggs
  • 4 tbsp vegetable oil

Marinade

  • 400g chicken thighs or breasts
  • 1 tsp grated ginger
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 pinch salt
  • Ground pepper
  • 1 tsp cornstarch
  • 1 tbsp vegetable oil

Seasoning sauce

  • 2 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • ½ tsp salt
  • ¼ tsp ground pepper

Garlic dipping Sauce

  • 15cl water
  • 1 garlic chive
  • A little hot chilli (or sweet)
  • 2 garlic cloves
  • 3 tbsp white rice vinegar
  • 1 tsp salt
  • 1 tsp sugar
