the Vietnamese Beef Noodle Soup

The Vietnam national dish, 'Everything is in the broth'

This is the favorite dish of the Vietnamese, it has crossed the borders and has become very appreciated in all the Southeast Asian countries. The writing is Phở and the pronunciation is near 'fuh'. Some believe that there is an historical link between Pho and the French beef stew called pot-au-feu.

It was originally a dish for the breakfast. Now you can enjoy it anytime, and it is often an opportunity to go out with family or friends.

The Pho noodle soup made at home can be excellent, especially if you live far from the major urban centers. The important thing is the broth, and for it to be really delicious, you have to use some tasty pieces of meat and cook for a long time. A Pho lover will judge the quality of the dish with the first spoonful of broth.

At home you can adapt the broth to your taste. Sometimes we like to choose pieces of beef a little fat and with nerves. Of course the quantities of spices will also differ from one home to another.

Doing a Pho at home does not require a lot of work, you have to watch out the beginning of the cooking to avoid the broth to become cloudy. The Pho cannot be done in small quantity, I give you the list of ingredients for 8 people. If you have fewer guests, you can freeze the broth and meats.

Variations with chicken or pork are also excellent if your broth has long simmered. You will not be disappointed. Bon appétit.


Ingredients for 8 people

    For the broth

    • 1kg of brisket
    • 1kg of oxtail
    • 6L of water
    • 7 tbsp of fish sauce
    • 1 tbsp of salt

    Spices

    • 3 star anise
    • 12 cloves
    • 2 cinnamon sticks
    • ½ tsp of coriander seeds
    • 20g fresh ginger
    • 1 large or 2 small onions

    Herbs

    • 8 branches of basil
    • 8 branches of phak pheo
    • 8 branches of mint
    • 5 chives
    • 10 branches of coriander
    • Fresh hot peppers (optional)

    The soup

    • 18 beef balls
    • 500g of rump steak
    • 250 g of soya bean sprouts
    • 1 lemon
    • 1 onion
    • 3 bags of fresh rice pasta of 400g
