Millennium Sauce
Chinese Brown Sauce

Each new cooking enriches it

The millennium sauce is a Chinese broth in which meats are long-cooked. It is reused as much as possible. The more reused, the better is the taste. It is suitable for all kinds of meat, it will make them tasty and tender.

The first cooking of a meat in a millennium sauce can be completed by a second one: in frying, in the oven, in the pan. For example, to get crispy millennium quails, after boiling them in the millennium sauce, put them in a frying oil. Pieces of pork cooked in millennium sauce will have an even more intense taste after baking or barbecuing them.

After each cooking, let the sauce cool, then keep it in the freezer. Also before it completely runs out, prepare a new dose by incorporating the leftover of the previous one. Bon appétit.

Ingredients

  • 5 tbsp dark soy sauce
  • 3 tbsp light soy sauce
  • 1 tbsp sesame oil
  • 10cl Shaoxing cooking wine
  • 3 tbsp sugar
  • 1 cinnamon stick
  • 3 star anis
  • 6 pieces orange zest
  • 1 tbsp salt
  • 1 tsp ground pepper
  • 4 slices ginger
  • 75cl water
